This is a small bakery where Mr. Doležal makes the best gluten-free koláče we have found. Koláče is a Czech national pastry made from yeast dough and filled with cheese, poppy seeds, apples or plum jam. This bakery is an over-the-counter store with no seating.
You must be warned that this is a conventional (gluten) bakery BUT Mr. Doležal cleans his work area thoroughly every Tuesday and Thursday morning before he bakes these little gluten-free marvels. They are ready for sale after 12 o’clock (sometimes a bit later) on Tuesdays and Thursdays along with sweet and savory gluten-free breadsticks. They’re often gone in a matter of hours. You’ll find them displayed on their own shelves away from the gluten goods, and they’ll be wrapped in separate bags if you buy both gluten-free and gluten-containing pastries. If you don’t eat them all right away, they’ll keep fresh until the next day (putting them in the fridge will help), so you can have them for breakfast. They also freeze well.
IMPORTANT: The majority of the gluten free pastries are made to order. We have found that it is better to place an order beforehand rather than just showing up and hoping a few pieces are left.
